Notes from Lindsay, Head Pastry Chef •

We wanted to create an item that is similar to a pie, but isn’t! While pies definitely have a spot at all Thanksgiving events, we thought doing a spin on a classic Pumpkin Pie would be fun!

We start with a vanilla tart dough made with our house milled spelt, and then bake those off into 8” tart shells. We then bake pumpkin pie filling inside and then top it with a layer of Dark Chocolate Ganache! Once that has set, we quenelle Spiced Buttercream around the edges, decorate with toasted cacao nibs for crunch, and maldon sea salt to boost the flavors of the chocolate!

This is a beautiful item to bring along to your festivities, and will certainly be eye catching for everyone. It is sweet and decadent, and really enhances the question of why do we not pair Dark Chocolate with Pumpkin Pie more often!



AT HOME INSTRUCTIONS:
We recommend not heating the tart. Instead, let it sit at room temperature for about an hour. This will allow us to display it nicely and help the dark chocolate ganache layer temper perfectly before slicing. Any leftovers can be stored in the fridge to enjoy later!
