We are a sister company of Corvus Coffee! We became a bakery in 2020 and we supply pastries to every Corvus Coffee Location. We currently do not offer our pastries to any other businesses, so it makes for us to be a really special place! We actively work to grow supply and demand through relationship driven sourcing and storytelling. We strive to have relationships with our farmer’s, our clients, our purveyors - everyone involved in our process. We work to create demand for nutritious and flavorful heirloom grains to support a more local and sustainable economy.

Meet The Team

Lindsay Flang - Executive Pastry Chef
I’m a Colorado native who fell in love with the culinary world through the Broadmoor ACF Apprenticeship, where I trained full time for three years in everything from butchery to fine dining. That passion took me to Chicago’s French Pastry School and then to Michelin-starred kitchens before I moved to Austin, where I eventually became Executive Pastry Chef at South Congress Hotel. After years of learning, leading, and layering laminated dough, I returned to Colorado with my husband and pups—and found my home at The Fox and the Raven.

Em L. - Sous Chef
I was born and raised in the Denver Metro Area. After a year studying journalism in Indiana, I moved back home to finish my degree in Gender, Women, and Sexuality Studies with a minor in Interpersonal Advocacy. I'm the oldest of four siblings and now live in Denver with my wonderful spouse and our spirited black cat, Poe.

Izzy - Tournant
Hi, I’m Izzy! I moved to Colorado from Illinois and ended up falling in love with kitchen life after taking a job on a whim. Now I’m the tournant at The Fox and Raven, where I get to learn, grow, and taste-test lots of buttercream. When I’m not baking, I’m usually climbing rocks, leading my D&D campaign, lifting weights, playing an instrument, or building something cozy in Minecraft.

Trisha - Baker
I was born and raised in Denver and now spend my days baking bread, which is my favorite because it's alive, unpredictable, and full of personality. I started with hobby baking at home and wanted to turn that passion into something more. Outside the bakery, I write fiction, hang out with my two dogs, two cats, two chickens, and two guinea pigs, and dream about someday adding a Highland cow to the mix.
